½ Cup whole wheat pastry flour
¼ Cup all-purpose white flour
¼ Cup Victory Hemp Protein50
1 teaspoon baking powder
¼ teaspoon baking soda
1 ¼ cup milk (or hemp, almond or another plant-based milk plus one egg white)
1 Tablespoon canola, sunflower or another expeller pressed oil
1 Tablespoon lemon juice
Mix dry ingredients in a large bowl. Beat egg in a small bowl. Mix wet ingredients. Add egg to wet ingredients. Gently mix wet ingredients into dry ingredients. Add any fruit or other pieces (1/2 to a whole cup of fresh or frozen berries, or sliced banana, apple, peach..) and complete mixing. Put 1/3 cup batter per pancake into hot nonstick or oiled pan at medium heat. Flip when bubbles start to form around edges.
